American Fried Tomatoes
Preparation:
Cut the tomatoes into slices one centimeter thick. Dip tomatoes into flour to coat, then in beaten egg and breadcrumbs.
Meanwhile fry the slices of bacon in a skillet; once they have loosened all the fat fry all the tomato slices on both sides until golden brown. Leave them on absorbent paper and warm place while you prepare the sauce.
For the sauce, pour the flour on the fat left in the pan and stir. Add the slices of bacon, 1 spoon of broth and mustard; mix well, put salt and pepper and cook gently for 5 minutes.
Pour over fried tomatoes, serve and enjoy.
