Fish with tomato

Ingredients:

  • Fresh fish, halibut, grouper, etc ...
  • 450 g of fresh tomatoes,
  • 225 g chilies
  • 3 tablespoons tomato puree
  • 1 large onion, chopped
  • 2 lemons
  • 190 ml peanut oil
  • Pinch of thyme and curry powder
  • Salt to taste

Preparation:

Clean the fish and cut into fillets. Rub with lemon, place in a bowl and season with salt, thyme and curry powder. 

Leave to marinate for half an hour.

Heat oil in a pot then add the tomatoes, peppers and onions.

Cook for 20 minutes  and add the  tomato puree and the marinated fish.

 Season with salt and cook for 20 minutes.

 Stir gently so the fish doesn´t flake.

Season it and serve over some rice.
