Pesto Sauce

Ingredients:

  • 15 grams of fresh basil (not dried basil) 
  • 50 grams of pine nuts (about 4 tablespoons) 
  • 30 grams of Parmesan or 30 grams of old or aged cheese (sheep's or mixed) 
  • 1 clove garlic 
  • 8 tablespoons extra-virgin olive oil 
  • 1/2 teaspoon salt

Preparation:

Peel the garlic and place it into an electric grinder to make it very thin.

Now add the basil leaves (remove stems if any), pine nuts and salt and chop until obtaining an homogeneous paste.

Then add olive oil and mix all together in a blender until an uniform mixture.

Once this is done, add 4 tablespoons of warm water, so it doesn't get too thick.

Finally add either Parmesan cheese or the aged cheese to the sauce and serve it with some pasta or bread if you wish.
